Good Wine! Good Time!

The Educational Forum with special guest, Peter Koff, MW, CWM on October 27th was as good as it gets!   Peter is an exceptionaly interesting person, and as you might expect from his credintials, he really knows his wine. Many thanks to Norm Rush and Beaumad & Associates for making this event possible!

The mood was relaxed and casual as we enjoyed Peter's selection of three whites and three reds which he imports to the United States. Forty of us were seated around ten tables arranged with various nuts, cheeses, and meats. Peter had earlier personally opened and tasted all bottles to ensure the quality, and had all six wines poured as we were being seated.

We took our time, slowly exploring and evaluating each wine, while Peter explained the intricacies of the appellation, grape, and the vintner's methods. During Peter's dissertations the floor was always open for comments, questions, and discussion; we learned a lot from the interaction.

After the tasting and discussion Peter spent an hour or so visiting and making us all feel very special in his world of wine. What a plesent evening! Thank You so much Peter Koff!

At Vintage Station your wine glass appears to be about half full when we pour it. There is a reason for this. Wine needs to combine with the air to fully develop in taste and smell. Swirling the wine in the glass allows the air and wine to mix. Also, the wine on the side of the glass helps in allowing the aroma to collect in the glass. Swirling would not be possible if the glass were poured to the top.

Also, we pour in large glasses. For example, our red wine glass is an eighteen and a quarter ounce glass. If we poured it full, it would hold three quarters of a bottle. That would, of course, raise the price of a glass considerably. We are very careful to pour five ounces in each glass and price our product according to the amount poured.



A Little Sherry..
One of the oldest and most wonderful fortified wines made is a Sherry. Sherry comes from a corner of south-west Spain called Andalusia. The grapes are grown in the white, chalky soil characteristic to that region known as Albariza. This is a very porous soil that soaks up the brief rains and allows the grapes to survive the hot humid summers. Rain falls on average for only 75 days a year. Palamino and Pedro Ximenez grapes are the two traditional grape varieties used in Sherry. When picked, the grapes will be left to dry for up to two weeks to concentrate the sugars before they are crushed. This gives a small quantity of juice with a very high sugar content.


Wine has been made in Spain for many hundreds of years but it was only in the 18 th century when the modern Sherry business began. The English were familiar with Sherry since the Middle Ages. 1340 is the first year we have a written English record of wine being imported from Spain. 1340 was also the year when Chaucer was born. He wrote in the Pardoner's Tale: "This wine of Spain creepeth subtilly of which there riseth such fu-mositee." He was almost certainly writing about a rich Sherry.

1587 was the year when Sherry shot to prominence after Sir Francis Drake set alight the Spanish fleet in Cadiz and made off with 3,000 casks of Sherry. This helped start large scale Sherry drinking in England. During the next centuries, Sherry became a common drink that was found in every house. In 1873 some 68,500 casks were imported into England.

Sherry is usually served after dinner with fruit, cheese or desert. Usually it is served at room temperature in a small glass and if you're really lucky, in front of an open fire with wonderful company.
